The Ultimate Crispy Roast Potatoes (The Only Christmas Recipe You Need)

No Christmas dinner is truly complete without roast potatoes. They are the ultimate holiday side dish—the glue that holds the entire feast together.
But far too often, holiday cooks serve up sad, leathery, or soggy potatoes that look more like boiled spuds than roasted masterpieces.
If you want potatoes with a shatteringly crisp, glass-like crust and an inside that is as light and fluffy as a cloud, you are in the right place. Today, we are diving into the science of the perfect crunch using two game-changing kitchen hacks.

🕒 Prep time, Cook time & Servings
  • Prep time: 20 minutes
  • Cook time: 50-60 minutes
  • Servings: 6 people

🛒 The Ingredients
The Base
  • Potatoes (High-Starch/Russet/Maris Piper): 4 lbs / 1.8kg (peeled and cut into large chunks)
  • Baking Soda (Sodium Bicarbonate): 1 tsp / 5g (Hack #1)
  • Kosher Salt: 2 tbsp / 30g (for boiling)
The Liquid Gold & Aromatics
  • Duck Fat, Goose Fat, or Beef Tallow: 1/2 cup / 120ml (Hack #2)
  • Garlic: 1 whole head (separated into cloves and smashed)
  • Fresh Rosemary: 4-5 sprigs (leaves roughly chopped)
  • Black Pepper & Flaky Sea Salt: To finish

🍳 Step-by-Step Instructions
Step 1: The Angular Cut
  1. Peel your potatoes and cut them into large pieces.
  2. The Pro-Tip: Don't just slice them into cubes. Cut them at steep angles. The more sharp angles and surface area your potato has, the more crispy bits you get at the end.
Step 2: The Alkaline Parboil (Hack #1)
  1. Bring a large pot of water to a rolling boil. Add your 2 tablespoons of salt and 1 teaspoon of baking soda.
  2. Add the potatoes and cook for roughly 10 to 12 minutes.
  3. Why this works: The baking soda creates an alkaline environment. This breaks down the potato’s exterior starch much faster, creating a soft, slurry-like surface while keeping the interior intact. You want them soft enough that a knife slides in with zero resistance.
Step 3: Rough Them Up!
  1. Drain the potatoes thoroughly in a colander and let them sit for 2 minutes to let the surface moisture evaporate.
  2. Hold the handles of the colander and shake it aggressively up and down.
  3. Don't be afraid to break them slightly! You want the edges to look completely frayed, beaten up, and covered in a thick layer of potato paste. This starchy paste is what fries into a golden armor in the oven.
Step 4: The Hot Fat Bath (Hack #2)
  1. While your potatoes are boiling, preheat your oven to 425°F / 220°C.
  2. Pour your duck fat onto a large, heavy-duty rimmed baking sheet. Place the sheet in the oven for 5 to 7 minutes until the fat is smoking hot.
  3. Carefully remove the tray from the oven. Carefully lower the potatoes into the hot fat. You should hear a massive sizzle immediately. Turn the potatoes over using tongs so every single side is drenched in fat.
Step 5: The First Roast
  1. Spread the potatoes out into a single layer. Make sure they have space—if they are crowded, they will steam instead of fry!
  2. Roast for 30 minutes without touching them. This allows the bottom crust to lock into place.
Step 6: Add the Flavor & Flip
  1. After 30 minutes, pull the tray out and flip every potato.
  2. Scatter your smashed garlic cloves and chopped fresh rosemary over the top.
  3. The Warning: Do not add garlic and herbs at the beginning of the cook! They will burn into bitter, black ash over an hour of high-heat roasting. Adding them halfway through infuses the oil perfectly.
  4. Return to the oven for another 25 to 30 minutes, flipping once more if needed, until they are deep mahogany brown and violently crispy.
Step 7: Drain and Serve
  1. Transfer the roaring hot potatoes to a serving bowl using a slotted spoon.
  2. Season with an extra pinch of flaky sea salt and freshly cracked black pepper. Serve immediately and listen to that incredible crunch!

💡 Chef's Pro-Tips for Success
  • Choose the right potato: You must use starchy, floury potatoes (like Russets or Maris Pipers). Waxy potatoes (like red potatoes) will never achieve that legendary fluffy interior.
  • Never crowd the pan: If your potatoes are touching each other, use two separate baking sheets. Space equals crispiness.
