Flatbread is one of the easiest bases for a fast, budget-friendly meal. You can make a soft batch from scratch in a dry skillet, fill it with shawarma or seasoned beef, turn it into a quick Turkish-style flatbread pizza, or fold it around a creamy tuna and cheese filling.
Every recipe below includes metric and US measurements. Start with the homemade skillet flatbread if you want to make your own, or use good store-bought flatbreads for the filled recipes.
1. Easy Homemade Skillet Flatbread
Makes 4 flatbreads
Ingredients
- 200 g all-purpose flour (about 1 2/3 cups)
- 175 g full-fat or Greek yogurt (about 3/4 cup)
- 1 teaspoon baking powder (about 4 g)
- 3 g salt (about 1/2 teaspoon)
- 1 tablespoon water (15 ml), only if the dough feels very dry or stiff
Method
- Put the flour, yogurt, baking powder, and salt in a large bowl. Stir with a spoon until the mixture starts to come together.
- Knead briefly with your hands until you have a smooth dough. Do not knead it for a long time. If it feels very dry or stiff, work in 1 tablespoon (15 ml) water.
- Divide the dough into 4 equal pieces. Lightly flour the work surface and roll each piece into a round or oval flatbread, about 2 to 3 mm thick (roughly 1/16 to 1/8 inch).
- Heat a dry skillet over medium heat. No oil is needed. Cook the first flatbread for about 2 minutes until small bubbles and brown spots appear. Flip and cook the second side for another 1 to 2 minutes.
- Repeat with the remaining dough. Serve warm, or stack the flatbreads on a plate and cover them with a clean kitchen towel to keep them soft.
Important: If you roll the dough much thinner, the bread can become hard in the skillet. If it is too thick, the center will not cook as evenly.
2. Shawarma Flatbread with Garlic-Lime Sauce
Makes 2 generously filled flatbreads
Ingredients
- 175 g shawarma meat (about 6 oz)
- 2 flatbreads, homemade or store-bought
- 6 cherry tomatoes
- 1/4 cucumber
- 50 g shredded iceberg lettuce (about 1 3/4 cups)
- 1 large sweet pointed pepper
- A small drizzle of oil
- Fresh cilantro or parsley, optional
For the garlic-lime sauce
- 4 tablespoons quark or thick Greek yogurt (60 ml or 1/4 cup)
- 1 garlic clove, crushed
- 1 tablespoon lime juice (15 ml)
- 1 teaspoon sriracha (5 ml)
- Small pinch of salt or black pepper, optional
Method
- Mix the quark or Greek yogurt with the garlic and lime juice. Taste first, then add only a small pinch of salt or pepper if needed. Keep the sriracha separate for now.
- Heat a small drizzle of oil in a skillet over medium heat. Cook the shawarma, stirring regularly. Slice the pointed pepper into thin strips and add it after a few minutes.
- Cook until the meat has browned with crisp edges and the pepper has softened.
- Quarter the cherry tomatoes and cut the cucumber into thin half-moons.
- Warm the flatbreads in a dry skillet or according to the package directions. Spread each with the mild garlic-lime sauce.
- Top with iceberg lettuce, hot shawarma and pepper, tomatoes, and cucumber. Stir the sriracha into the remaining sauce and spoon it over the top. Add cilantro or parsley if you like, fold, and serve right away.
3. Flatbread with Seasoned Ground Beef
Makes 4 flatbreads
Ingredients
- 300 g ground beef (about 10.6 oz or 2/3 lb)
- 4 flatbreads
- 1 onion
- 2 garlic cloves
- 2 tomatoes
- 1 teaspoon paprika (5 ml)
- 1 teaspoon ground cumin (5 ml)
- Salt and black pepper, to taste
- A small drizzle of oil
- 100 g shredded iceberg lettuce (about 3.5 oz or 3 1/2 cups)
- Garlic sauce, to serve
- Sambal or chili sauce, optional
Method
- Warm the flatbreads according to the package directions.
- Finely chop the onion and garlic. Dice the tomatoes.
- Heat a small drizzle of oil in a skillet. Add the ground beef and break it up well as it cooks, so you have small crumbles rather than large chunks.
- Season with paprika, cumin, salt, and pepper. Add the onion and garlic and cook for a few more minutes until the onion softens and the garlic smells fragrant. Make sure the beef is fully cooked.
- Layer iceberg lettuce over each warm flatbread. Spoon on the seasoned beef, add diced tomatoes, and finish with garlic sauce. Add sambal or chili sauce if you want more heat.
The cumin gives the beef a warm, earthy flavor, while the cool lettuce keeps the flatbread fresh.
4. Quick Turkish-Style Flatbread Pizza
Makes 10 flatbreads
Ingredients
- 10 thin flatbreads
- 300 g ground beef (about 10.6 oz or 2/3 lb)
- 1 sweet pointed pepper
- 1 tomato
- 70 g tomato paste (about 4 tablespoons plus 2 teaspoons)
- 15 g fresh parsley (about 1/2 cup, loosely packed)
- 2 garlic cloves
- Salt and black pepper, to taste
For the fresh topping
- Garlic sauce
- 1 or 2 tomatoes, chopped
- 1/2 cucumber, chopped
- 2 handfuls of lettuce
- Spicy Turkish red sauce, to taste
Method
- Preheat the oven to 200°C (400°F). Line baking sheets with parchment paper.
- Cut the pepper and tomato into large pieces. Put them in a food processor with the ground beef, tomato paste, parsley, garlic, salt, and pepper.
- Process until finely combined into a spreadable mixture. It should not be liquid.
- Place the flatbreads on the prepared sheets. Spread the beef mixture evenly and thinly over each bread, leaving a narrow edge if you like.
- Bake for 10 to 12 minutes until the beef is cooked through and the edges are lightly crisp. If you are using two sheets and your oven cooks unevenly, switch their positions halfway through.
- While they bake, chop the tomatoes and cucumber. Top the hot flatbreads with lettuce, tomato, cucumber, garlic sauce, and a little spicy red sauce. Fold each one in half to serve.
Adding the vegetables after baking gives you the best contrast between the warm seasoned beef and the crisp topping.
5. Cheesy Tuna Flatbread Melt
Makes 4 flatbreads
Ingredients
- 4 flatbreads
- 160 g canned tuna, well drained (about 5.6 oz)
- 100 g shredded cheese (about 3.5 oz or 1 cup), or to taste
- 1 tablespoon mayonnaise (15 ml)
- 1 teaspoon mustard (5 ml)
- 1/2 red onion, finely diced
- Corn, jalapeƱos, or tomato, optional
Method
- Preheat the oven according to the directions on your flatbread package. Line a baking sheet with parchment paper.
- Drain the tuna very well. Mix it with mayonnaise, mustard, and finely diced red onion.
- Place the flatbreads on the baking sheet. Divide the tuna mixture over one half of each flatbread and add shredded cheese.
- Fold the empty half over the filling. Bake for about 5 minutes, or until the cheese melts. Watch closely because ready-made flatbreads can brown quickly in a hot oven.
- Cut in half if you like and serve immediately. Add corn, jalapeƱos, or tomato if you want, but the melts are also delicious just as they are.
Quick Flatbread Tips
- Keep homemade flatbread soft: Stack it and cover it with a clean kitchen towel.
- Use a dry skillet: The homemade flatbread does not need oil.
- Build hot and cold contrast: Add fresh lettuce, tomatoes, and cucumber after hot fillings or baked flatbreads come out of the oven.
- Choose your heat level: Keep spicy sauces separate until the end so each flatbread can be mild or hot.
Which Flatbread Will You Make First?
Choose the homemade skillet bread for the simplest starting point, the shawarma or ground beef version for a fast dinner, the Turkish-style pizza when you are feeding more people, or the tuna melt when you want something warm and cheesy.
