🕒 Prep time, Cook time & Servings
- Prep time: 30 minutes
- Cook time: 1 hour 15 minutes (plus 2 hours cooling time)
- Servings: 6 to 8 people
🛒 The Ingredients
The Meringue Base
- Egg Whites: 6 large (at room temperature)
- Superfine Sugar (Caster Sugar): 1.5 cups / 300g
- Cream of Tartar: 1/2 tsp / 2g (Hack #1)
- Cornstarch: 2 tsp / 8g (Hack #2)
- White Vinegar (or Lemon Juice): 1 tsp / 5ml
- Vanilla Extract: 1 tsp / 5ml
The Festive Toppings
- Heavy Whipping Cream: 1.25 cups / 300ml (chilled)
- Powdered Sugar: 2 tbsp / 25g
- Fresh Raspberries & Strawberries: 1.5 cups / 200g
- Pomegranate Seeds: 1/2 cup / 75g
- Fresh Mint Leaves: A small handful (for the wreath greenery)
🍳 Step-by-Step Instructions
Step 1: Prep the Canvas
- Preheat your oven to 250°F / 120°C (we will lower this right when the pavlova goes in).
- Take a sheet of parchment paper and use a 9-inch (23cm) cake pan to trace a neat circle in the center with a pencil. Turn the paper upside down on your baking sheet so the pencil marks don't touch your food.
Step 2: Whip to Perfection (Hack #1)
- Wipe down your mixing bowl and whisk attachment with a bit of lemon juice to ensure they are 100% free of grease.
- Pour in your room-temperature egg whites and add the cream of tartar. Whip on medium speed until soft peaks form.
- The Sugar Secret: Turn the mixer to high speed and begin adding your superfine sugar one tablespoon at a time. Do not rush this! It should take about 5 to 7 minutes to add all the sugar. Whip until the meringue is thick, glossy, and holds stiff peaks.
Step 3: Fold in the Magic (Hack #2)
- Stop the mixer. Sprinkle the cornstarch, white vinegar, and vanilla extract over the meringue.
- Using a rubber spatula, gently fold these ingredients in by hand.
- Why this works: The acid from the vinegar and the starch from the cornstarch bind to the proteins, creating a stable network that keeps the inside incredibly soft, gooey, and marshmallow-like while the exterior bakes into a crisp shell.
Step 4: Shape the Wreath
- Spoon large, pillowy dollops of the meringue onto your traced parchment circle, making sure they touch and connect to form a ring.
- Use the back of a spoon to smooth the outer edges upward.
- The Trench: Run the tip of your spoon gently down the center of the ring to create a shallow ditch or valley all the way around. This creates the perfect nest to hold our cream and berries later.
Step 5: Low and Slow Bake
- Place the tray in the oven and immediately lower the temperature to 200°F / 100°C.
- Bake for 1 hour and 15 minutes. Do not open the oven door under any circumstances!
- Once the timer goes off, turn the oven completely off. Crack the oven door open just an inch (using a wooden spoon to prop it open if needed) and leave the Pavlova inside to cool completely for at least 2 hours. This slow cool-down prevents the shell from cracking drastically.
Step 6: Decorate and Serve
- Whip your cold heavy cream with the powdered sugar until medium peaks form.
- Carefully transfer the cooled Pavlova wreath to your serving platter.
- Spoon the whipped cream generously into the center trench. Top with fresh berries, vibrant red pomegranate seeds, and fresh mint leaves to complete the holiday wreath look.
- Dust lightly with powdered sugar right before serving for a beautiful snowy effect!
💡 Chef's Pro-Tips for Success
- Sugar check: Rub a bit of the whipped meringue between your fingers before baking. If it feels gritty, keep whipping until the sugar is completely dissolved and it feels silky smooth.
- Assemble at the last minute: Meringue absorbs moisture quickly. To keep the shell perfectly crunchy, add the whipped cream and fruit no more than 1 to 2 hours before your guests arrive.
